They (all recumbents) look difficult to get onto when first beginning? We want to travel with the bikes in our RV and the standard rack feature is very appealing.
I would really love to see one up close and maybe try one out.

Not even close to you. But i would suggest trying alot of different recumbent bikes and finding one that suits you. Let your wife? do the same. You might not agree on what is a good bike. It is importent to get a bike that feels right.
I LOVE my cruzbike, but it was a step learning curve and it was frustrating at times. But it was worth it.
I think that cruzbike is pretty easy to get onto but the first few starts might feel very ackward, but if you keep trying you too will learn it.
Some recumbents are easier than others to get onto. A 3 wheeled trike will not fall over, but it wont fit a standard rack. Therefore some are foldable.
Trikes are in 2 kinds. 2 wheels in front, is called a tadpole. 2 wheels in the rear is called a delta. There are pro and con to both kinds.
Since you are 2? or more persons you might not all ride the same speed. Have you considered getting a Tandem? You can get a tandem recumbent too, both 2 wheels and 3 wheels. I dunno about folding.
As a speciality the Hase kettwiesel trike can be attacked to another hase kettweisel and form a train. This means you could go the same speed, which might make you more happy.
