Probably he stops to drink? The bike also has front and rear derailleurs. I wonder how shifters are installed for both on the left hand?

If you look carefully at the video at 1:06 he even rides hands free in order to drink while riding !

Came across this video, very nice! He rides with one hand due to a disability. Amazing! I wonder how those panniers are attached considering the rear suspension! He says he used a front bicycle rack. Looks nice.

+1 .. and I might add, use pedals with cleats or toe clips. They make it a lot easier. You don't need to add anything to your bike to achieve this. This cruzbike design (aka MBB FWD) is inherently pedal steered. In fact, when first learning to ride it, you are basically countering(and fighting)...

B.t.w. unless I missed somthing, 26" x 1 & 3/8" does not fit on 26" x 1" rim becuase 26" x 1 & 3/8" uses ISO 590 rim , while 26" x 1" uses ISO 559 rim. Thought it important to note.

The goal, it seems, is bare-bones functional simplicity, low cost of mass production and a foolproof seat angle for the newbies. The seat tilts no lower than 50 degrees. That's pretty upright, (hence) no headrest is needed and I think you probably can glance slightly over your shoulder. It also...
