2019 S40 Frame set - What Wheels and Group set?

I weigh about 192 pounds and would like advice on the selection of a fast set of wheels/hubs for running tubeless tires. I will be using disc brakes.
Who is running the 1x system and how do you like it?

Novatec CXD wheelset. Used on my DF gravel and cross bikes and switched to my S40. Excellent wheelset for the $. Not using tubeless now since I’m running Conti’s but loved them tubeless w Panracer Gravel Kings on dirt and gravel. The DF gravel bike was 1x, 42 x 11-36 and I loved the setup - Sram CX1. Have not tried it on my S40

You mention wanting "a fast set of wheels," which tells me that you plan to hustle at least sometimes on your S40. For that I would recommend a 2x system where you have a wider gear range with smaller jumps between gears. You'll have an easier time finding the right gear for the speed you want to go, rather than being stuck between a gear that is slightly too easy or slightly too hard on a 1x setup. The simplicity of 1x is nice, but when you're riding, you want the right gear for your mood and terrain.

I have carbon go-fast 20/24 spoke wheels on my V20 and S30 with 25mm Schwalbe Pro Ones set up tubeless. They are a little fragile (but most race-ready road tires are), but for the ride quality and ease of setup I am willing to replace them a little more often. My S40 is built as my commuter and runaround bike. I built up a pair of 27.5 carbon CX wheels, 28 spokes with disc hubs, which allows me to run balloon-like 42mm Panaracer Gravel Kings. These wheels are certainly slower, but the ride is magic-carpet smooth. But I could see that if I were to put the V20 wheels on the S40, it would be a quick bike too.

After munching several pairs of aluminum wheels on Cruzbikes (and I only weigh 130 pounds), I switched over to carbon rims, which have been absolutely bombproof. They cost more up front, but at the rate that I was going through aluminum rims, I figure I've saved money--and that's with me building my own wheels.

Entirely agree on the 2x recommendation. Optimum cadence is so much more important on a CB compared to DF. . . Especially when it comes to climbing.

I ran 1x on my S40 for a while. I'm now running 2x11.
I have an old 14 speed Rohloff hub I used with a 44 chainring. I spun out at less than 30 mph, but I couldn't go to a bigger chainring without my cadence being too low on the hills I ride. Also, efficiency was poor (1.4mph slower up the same hill at the same power compared to the same bike with a derailleur).

I switched to 1x11 with 44 chainring and 11-46 cassette but had the same issue (spinning out below 30 mph). There is a downhill section of my commute where I "need" to go over 35 mph so I can take the lane and stay out of the driveway zone. That's my excuse for switching to 2x.

My wheels are more in the "bombproof" than fast category, but I'm using HED Belgium+ disk brake rims, tubeless with White industries hub and 32-spokes.

I hope this new color frame set has a new front derailleur stalk. I have 2017 model, and the front derailleur stalk's tab is too high for 50x34 setup which made the adjustment very finicky. My chain drops when shifting from 34 to 50 if I don't shift gingerly and carefully. Another thread discussed this, and I think the solution is either finding a very good bike mechanic who can adjust the front derailleur exactly right or change the large ring to 52.
