Clipless pedals and hill starts...

I have been using Shimano SPD's since they first hit the scene in the early 90"s.
As to how durable they are I still have 3 pairs of the original M737's, 1 pair each on my Silvio and my Vendetta and the spare as a back up.
They are very easy to service.
I change the cleats out and grease the internals every 2 or 3 years.
I haven't tried any other click in pedals except for a brief flirtation with Looks when I had a diamond frame road bike (terrible cleats to try to walk on).
 
Hopefully next weekend I can start my adventure with an S40. Over the last few days, I have been looking at pedals to put on it.

As I noted before, I have Shimano A530s on my trike (SPD and platform). My problem with the platform side is that it can feel slick under foot at times. I found that out on my SWB; always clipped in on the trike.

For the S40, I know I want to start with a platform and want more grip from it. I am looking at the Crank Brothers Doubleshot 3. The other Doubleshots versions look like they will have similar issues to my existing pedals. They downside is that I would have two different cleat systems. I’ll have to look at some of the SPD options listed in this thread.

I'd probably have a very close look at Shimano PD-T8000 reversible pedals, with built in reflectors, which I personally like ...and the grip-pins on the shoe side look completely slip-proof

I have used standard Shimano and knock off spd pedals and with the plastic platform like you too. I used the platform for riding the mountain bike in the winter, eventually I found that I wasn't using the platform at all anymore because I was clipping out so automatically that I never have an issue even in snow and ice, then the advantage of the clipless pedal is realized in extra control = no possibility of the foot slipping off the pedal accidentally, even when lifting on the pedal. At that point I'd rather be clipped in - always.

And as for reflectors on the pedals. Here's my observation: they don't matter because the reflectors are pointing at the ground or at the sky because of the foot position on a recumbent. We'll just have to add reflectors to the crank arms and they will work for forward only cuz our bodies are in the way. Use rear lights always is not so hard anymore with USB chargeable lights.
