Getting the conversion kit
Getting the conversion kit first is the first step.
You may need a new fork with cantilever brake posts, or you can see if the Maestro at Rebound Centre may be able to hack those for you. I do not think the current fork can handle cantilever brakes.
You may need to change the brake levers to something that's long-pull for the cantilever brakes.
You may also need a new seat post, something that will work with what comes with the conversion kit.
I will start on my own conversion as soon as my bike frame returns from the Rebound Centre after having a cracked head tube re-welded.

In addition to what Roy said, I'm a little worried about how high the seat would be. You want the seat to be at inseam - 3" or lower.
To expand on what Roy says, you can't use disc brakes with a conversion kit because (1) you need to turn the fork around and (2) because even if you tried without turning the fork around (which is a bad idea), the wheel is no longer centered where the brakes are expecting it to be centered.

This is from a 16" frame Giant MTB hardtail that I used for a couple of years (I now use the V2K Frame) it was a good height for me (6'2") and made a nice light recumbent,
The drawback with using a Hardtail frame especially an alloy one is when the back wheel hits a big bump you will feel it through the seat back and it can be quite a solid hit, The trick to get around this problem is to get your back off the seat when you see the bump coming.
One problem I see is that even if you can fit V brake posts to that fork you may need to grind off the disc brake mounts to allow the kit to fit properly so I would advise finding another fork possibly a shorter travel one to keep the seat height nice and low.

Excuse my temporary lapse in judgment. I do think the S-Works M5 would be fun to take out on the trails, but the fun might be short-lived once the aches and pains of riding upright kick in.
