    I couldn't ride no-hands on the Q until after I swapped out the pogo stick...er, I mean, suspended fork ;) for a rigid QX100 fork, and the stock rear shock for an air shock. Couldn't do it on the S30 until I installed a Thor seat, which raised my head and shoulders a bit. I resemble that remark :D

    Uphill starts

    I have that kind of pedal (Shimano M324) on both my Cruzbikes. I put a mounting bracket from an old set of PowerGrips on my starting pedal to weight it where the platform side defaults to facing me, and the other bracket on the other pedal to default the clip side to facing me.

    It will improve. You'll get to where you can take one hand off the handlebars without thinking about it and keep a straight line. You may even find one day, after some practice, that you can ride no-hands.

    I run my SPD pedals adjusted almost as easy/loose as they'll go. I have the ones that are platform on one side, clip-in on the other (M324?). Never had a problem with pulling out of them unexpectedly--though I don't hammer and sprint a lot, either. Plenty of adjustment range.
