I have mine on top of the boom as well. The key is to have a bottle holder that will keep the bottle in place otherwise it will pop off if you hit a bump in the road.Other than the long wheelbase days of old - ideal bottle positioning has always been something of a trade off with recumbent bikes. Nearly all recumbents go for a behind the seat solution. Another possibility you CAN do is on the top of the boom as you mentioned, and also the Q has enough room for my fave - a handlebar cupholder. Here is a pic of my cupholder that I used on RAGBRAI last year. Another option I am also currently working on is a side rack attachment that would put a bottle under the seat.
You can drill two holes in the seat base and do an underseat mount, but I find that less ideal for road debris/dust getting up onto the bottle.
