I use double-sided Shimano SPD pedals. Easy in and out, and the cleats are easy to walk in because of the way they nestle into the shoe.

Fun conversation to follow. I have about 40 KOMs between my V20 and S30, and I've found that the ones that stick best are the longer ones, like 10 miles and up. And if there's one thing that the V does really well, it's holding a high speed for longer distances.

Adding to what Derek said, also make sure that the gaps between the two halves of the clamps (two gaps on each side of the bb shell) are even. This will suggest that you have similar tension on all four bolts, and that the clamping pressure will be distributed across the clamp.
